On December 13th, Student Rabbi Luisa showed us how to make artichoke patties which are part of her family’s Chanukah celebration.  Here is the recipe:

Ingredients
1 can artichoke hearts
3 eggs
1 cup of whole milk
1 cup of breadcrumbs
Herbs, to taste (i.e. salt, pepper,
basil, oregano, parsley, onion and
garlic powder)
~ 2 Tbl of Parmigiana Cheese (to taste)
1/2 tsp baking powder
butter and vegetable oil (for frying)
Directions
Rinse and squeeze out water from artichoke hearts. Let drain. Season breadcrumbs, and add parmigiana cheese.
In a separate bowl, beat eggs and add the milk.
Combine milk and egg mixture and the bread crumbs, and let mixture stand for 10 minutes.
Meanwhile, chop the artichoke hearts.
Add baking powder to mixture and then the chopped artichoke hearts (don’t over mix!).
Fry (with two forks) in the vegetable oil and butter until nicely browned.
