Make Latkes with Ellen Love
Here’s what you’ll need:
- 5 baking potatoes, pealed and covered with cold water
- 2 onions
- 4 eggs
- 1/4 cup vegetable oil plus more for frying the latkes
- 1/2 cup flour or matzo meal
- salt – about 1 1/2 teaspoons
- baking powder – 1 teaspoon
Please have ready:
- a food processor or a box grater
- a large bowl
- good size skillet or frying pan
- a neutral oil for frying (canola, grapeseed, avocado, etc.)
- a pan with a rack for warming latkes in the oven.
Suggestion: peel potatoes and cover with cold water.
